REVIEW: Pip's Hot Sauce - Nagatropolis

lukeathompson

I bought this one a while ago and have been putting it off. It sounds like it’s going to be way too hot for me. I’m not here for the nasty pain, just the nice pain. It’s called Nagatropolis, presumably because it’s made with Nagas, which are stupid hot.

The website doesn’t say exactly how much Naga is in this, but says there’s 14% chillies here, which include Naga, Scotch Bonnets and Birds Eyes. So actually maybe it will be alright. Not ruin-your-weekend hot at least. Let’s see.

The smell is tomato, red pepper and garlic, and it’s thick. You need to shake the bottle a while before it will pour. It’s a nice deep, vibrant red colour.

The first flavour is tomato, garlic, vinegar - a bit bitter - and there’s immediate heat. There’s no doubt this is a hot sauce. I had a tablespoon, which was careless, with back of the tongue and back of the mouth heat. And a little hiccup. The heat feels sharp and after a sip of water it spreads to the side of my tongue.

It’s not killer heat but it is hotter than I want to be eating right now, probably on a level with some of the earlier sauces I tried - the Vampire Slayer, for instance, and Fiyah in D’bole. I’ve hardly opened either of them since.

Some people try to raise their heat tolerance so that they can better taste the breadth of flavours in hotter peppers and sauces. I don't, although having recently found our grocer selling Scotch Bonnets (in Cornish supermarkets you generally have the choice of ‘red’ or ‘green’ chillies and that’s about it) I’ve started trying them out in everything and I love the flavour - the fruitiness and sweetness - so if I’m likely to discover a new breadth and depth of flavours I could be up for it.

Maybe not for sauces though. The flavour of this one is nice, but if it’s going to hurt then I want the flavour to be exciting.

So if you really like heat and you just want a standard-flavoured hot sauce, this might be a good option. For me, I want a sauce with this level of heat to give me some more interesting flavours before it’s worth it!
