I love this company. This is how it should be done. The play, the flavours, the originality.
A specific Peruvian pepper is used here, the Aji Panca, which I’ve not come across before. It’s a very mild pepper from the Chinense species, which is a bit of a surprise. I associate Chinense peppers with the monstrously hot varieties and the family includes record breakers like the Carolina Reaper. I’m growing two Chinense varieties in the greenhouse this year and the peppers will have Scoville ratings of around 300,000. This Aji Panca is around the 500 mark (different websites give different information - anywhere between 100 and 1500), which is basically no discernible heat at all, and the sauce only has 1.5% of this pepper. I’m not sure what such a small quantity is adding to the sauce to be honest, nor why the bottle says it's medium hot, but I’m enjoying it nonetheless. The flavours are all Christmassy spices - cinnamon, nutmeg, cloves - and orangey fruit flavour, with the cranberry giving it a kind of edge so the flavour comes across at first a bit like the clementine rind.
I’d probably have liked more warmth in here but in terms of flavour it’s great. I’ve tried two DevilDog sauces now and I’m a fan. I’m going back to the website today to see what they have in stock. Take note of this - peppers are coming into season, which means new batches of sauces are being made. It’s a good time to start looking.
